A variety of thistle cultivated for food. Grows up to 2 metres tall and has very large leaves and a large bud which is edible. If left to flower the flower will develop into a large purple thistle like flower that is highly attractive to bees. Closely related to cardoon with very similar growth habits.
To harvest the artichoke heart, cut off the bud when its firm and not yet open - about the size of a baseball. Be sure to include a few cms of stem. Artichoke hearts can be enjoyed pickled, brines, steamed or roasted. The leaves can also be used medicinally and as a dye.
